Itch (Armenian Tabouleh)

Armenians are a big part of Aleppo’s culture and texture. They added their touch in every aspect from cuisine to the lifestyle.

This dish originally Armenian, but as usual Aleppian will adopt it and make it their own.

You can consider it a side dish, or a full meal since it’s packed with wholesomeness and fulfilling due to bulgur.

Ingredients

- 1 cup fine bulgur

- 1 or 2 bunch parsley

- 4 tomatoes

- 5 or 6 green onions

- 1 red sweet pepper

- few mint leaves

- 1 or 2Tbsp red pepper paste (hot or sweet)

- 2 Tbsp tomato paste

- 1/4 cup pomegranate molasses

- 1/2 or less cup olive oil

- 2 tsp cumin

- 2 tsp dried/crushed mint

- 2 tsp salt

- 1 lemon juice

- 1 or 1 and a half cup boiling water

Directions:

- In a deep bowl, mix bulgur, tomato paste and red pepper paste with the water. Till ingredients well corporate. Set it aside, let it cool down completely.

- When bulgur mix is cooled down, add to it the rest of the ingredients. Finely chopped parsley, little cubed tomatoes, little cubed red pepper, finely chopped green onion, and finely chopped fresh mint.

- Add the dressing, pomegranate molasses, cumin, dried mint, lemon juice, and olive oil.

Tips:

-Always taste and adjust the dressing before serving.

- Eat it with lettuce leaves, or cabbage leaves.
