Jazzarieh (carrot dessert)

 

Ingredients:

- 1kg (2lb) carrots, skin-on

- 1/4 cup carrots extract

- 2 tablespoons cornstarch

- 1/2 cup granulated sugar

- 1 cup raw walnuts, chopped

- 1 cup desiccated coconut, plus extra to coat

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground clove

- 1/2 teaspoon nutmeg

- 2 teaspoons orange blossom water

Directions:

- Boil the the carrots in a pan of water until very soft, drain the carrots really well, until all the water has completely gone then mash the carrots using blender. Place the mashed carrots in a nut bag, let drain for few hours.

- In a medium pot, add the carrots extract and sugar. Boil to have concentrated syrup, for about 20 minutes.

- Add to the pot, the mashed carrots, cornstarch, Cooked for more 10 minutes, remove from heat.

- Add walnuts, coconut, spices, and orange blossom water. Mix till well combined.

- Once completely cool, divide to equal bite dose balls. Cato with coconut.

- Store in fridge in an airtight container, for up to 1 week.
