Vegan Pasta

 

Ingredients:

- 400g fettuccine nests (or any pasta)

- 1/4 cup olive oil

- 1 small onion, 1/2 cup diced

- 4 garlic cloves, chopped

- 2 tablespoons fresh oregano, chopped

- 1 cup carrots, shredded

- 1 cup tomato purée

- 1 tablespoon salt

- 1 teaspoon dried oregano

To garnish

- pecorino Romano, grated

- Chili flakes

- fresh oregano

- olive oil

Directions:

- In a medium bowl filled with water, bring the water to boil , add salt, and cook the pasta according to the instructions on the packet.

- In a big pan, heat up the oil, add the diced onion, cook for few minutes. Add the garlic and fresh oregano, cook for few minutes. Season it with salt and dried oregano.

- Add the grated carrots, lay cook till soft, for few minutes. Add the tomato purée. Cover and let it simmer for 15 minutes on low heat.

- Add the pasta to the tomato sauce. Mix till well combined. Cook for extra few minutes, then remove from heat.

- Garnish with your preferred ingredients.
