Syrian Marinated Chicken

 

Ingredients:

- 1 1/2kg (3lb) chicken with bones and skin (I used breast and drumstick)

- 1/2 cup whole plain yogurt

- 1/2 cup olive oil

- 1/4 cup white vinegar

- 2 tablespoons tomato paste

- 1 tablespoon red pepper paste

-1 tablespoon salt

-1 teaspoon 7 spices

-1 teaspoon ground cumin

-1 teaspoon ground coriander

-1/2 teaspoon ground cardamom

-1/2 teaspoon ground thyme

-1/2 teaspoon ground nutmeg

-5-6 bay leaves

-small lemon wedges of 1/2 lemon

Directions:

- In a small bowl, mix all the marinate ingredients well (optional: add the vinegar last)

- In a big bowl, place the chicken and add the marinate. Cove each piece well. Add bay leaves and lemon wedges.

- Cover the bowl, let it set in the fridge at least 8 hours, preferably overnight.

- Bake for 45 minutes in a preheated oven on 350F, broil for 2 minutes.
