Vegan White Beans Stew
Ingredients:
- 500g (2lb) dry white beans
- 1 tablespoon baking soda
- 1 tablespoon cumin
- 1 tablespoon salt
For the red sauce:
- 1/4 cup olive oil
- 1 medium onion, small diced (1/2cup)
- 5 garlic cloves, small diced (1 tablespoon)
- 1 cup small diced tomato with liquid
- 2 tablespoons tomato paste
- 1 tablespoon red pepper paste (optional)
- 1 tablespoon dry coriander
- 1 tablespoon salt
Directions:
- In a big bowl, add the dry beans, cover with extra water, stir in the baking soda. Let the beans soak for at least 8 hours. Check every few hours, add water if absorbed all.
- Wash the beans, place the beans in a pot. Stir in the salt and cumin. Let it boil, lower the heat and simmer cover for 30 minutes. Or till the beans is fully soft.
- To prepare the red sauce for the stew, in a pot heat up the olive oil, add onion and coriander, sauté for 5 minutes. Add the garlic, sauté for more few minutes.
- Add the tomato, tomato paste, red pepper paste and cook covered on low-medium heat for 10 minutes.
- Add the cooked white beans, mix with sauce. Put back on low-medium heat covered to cook for 20 minutes.
- Garnish with parsley, serve it with lemon juice and Arabic bread.
